Morning glory is another name for 'water spinach' and a popular breakfast in Thailand. It's stir fried with some garlic, chilli and bean pastes.
It tastes amazing. It was a staple when I was in Thailand a couple of years ago to focus on writing our nutrition programme.
One of the hardest jobs for us is to change peoples breakfast
habits.
The marketing around breakfast is so strong that people think that we're weird if we suggest anything other than crunchy nut cornflakes, which I love.
Yet breakfast cereal is so poor in nutrients to set you up for the day that they now fortify it. And believe me they don't ad in the good stuff, just synthetic versions of the vitamins and minerals you find in real food.
Taking the step to morning glory or a
stir fry for breakfast is a big ask. It's not such a shock to the system to just change over to pancakes or eggs.
Breakfast should be full of nutrients to give your body the best start. Cereal doesn't provide that.
Ever wondered why you have a crash around 11am and need a snack? Coke famously marketed the Diet Coke break to give you a pick me up. I met the Diet Coke man once, he looked a lot better on the tele than he did in real
life; boring too.
Switch your breakfast from cereal and toast to some eggs, go decadent and have smoked salmon, be adventurous and try some veg. you'll definitely notice a difference to your energy levels throughout the day by the end of the week.
This morning we had purple sprouting broccoli, quinoa, eggs and some left over veg from last nights tea, Fran added a little bit of spice and it was fantastic.
